What is a supersaturate?
Supersaturated : An unstable condition of a solution (water) in which the solution contains a substance at a concentration greater than the saturation concentration for the substance.
A solution that has more solute dissolved than is possible under normal circumstances is referred to as being supersaturated. Cooks and chefs will understand this phenomenon well. A saucepan of water can only dissolve and absorb so much sugar and at that stage it is said to be saturated. If the saucepan of saturated sugar solution is heated more sugar can be dissolved and absorbed by the solution. When the solution is then left to cool to its original temperature it is said to be supersaturated. In this way the liquid can contain more solute than is theoretically possible.
Traditionally high temperatures have been required to create supersaturated solutions which can destroy the properties of the solute. However, new technologies and processes now allow the creation of supersaturates at much lower temperatures which can provide solutions that are far more powerful than concentrates, tablets or capsules.
Pills and capsules can be considered as a convenient means of distributing ingredients, but there are some drawbacks:
- a high percentage of fillers or binders are used which reduce the percentage of useable ingredients
- the heat used in the process can destroy some of the properties of the ingredients
- low bio-availability
- low cost effectiveness
Although a supersaturated liquid has the consistency and benefits of a liquid it appears to take on the properties of a solid, and can be particularly beneficial in the delivery of nutrients to the body. Pound for pound or gram for gram, a supersaturated solution contains much larger quantities of the ingredients which are more bio-available. Because the ingredients can be reduced right down to nano-particles they can travel easily through membranes and absorbed more easily by the body.
The Swiss-American company Sisel International has invested millions in its manufacturing facility and has pioneered supersaturation processes that are being applied to nutritional supplements which can increase the absorption rate by as much as 250 times when compared to encapsulated products.
